COMPOSITION
This Brunch Club Methode Ancestrale 2023 sparkling wine is composed of Sauvignon blanc. The vineyard was harvested earlier in the season, in order to best capture the bright and youthful flavours characteristic of a true brunch wine.
WINEMAKING
The fruit, in whole bunches, was pressed gently and allowed to settle overnight. Fermentation occurred spontaneously and proceeded at a low temperature for eight weeks before bottling. After five months on lees, the sparkling wine was disgorged.
